So then you're looking for some wheels that ARE hub-centric to your car! The E39 wheels are hub-centric too, just not to your car. Hubcentricity means that the center bore of the wheel is an exact fit to the hub of the car, allowing the wheel to center itself on the hub with no axial play, hence the term hub-centric. All the rings do is take up the extra space that the larger hub bore on the E39 wheel has, thus making it hub-centric to your smaller E28 hub.

And you're also looking for wheels with an ET of 20 or over. Under 20 would produce non-desirable (or is it desirable) rubbing. Right?

Chris, I've got 16x7.5 ET13s on the car now so no rubbing issues with low ET. Over ET20 and they'll rub up front, but not on the fender.

Kyle, sorry about my misuse of the word: "hub-centric". I knew what I meant as most others here did....even you, just didn't use the word correctly. My bad! I've had to use them before so I do know "what" they do and "why".
