My cat is shot and I want to cut it off, but the O2 sensor is in the cat. So where do you place the O2 sensor if I where to run a straight pipe?

The same location where it previously was. Weld a bung to the pipe and screw it in.

If you are doing that kinda hacker work, why not weld in an el-cheapo Cat Con?

Because it costs about 3x as much and is a POS. I had the catalyst removed on my old 535is and it most certainly was not a hack job.
