If I am cruising along at around 2000 RPM while not accelerating or decelerating, the car will sometimes shudder.
To rectify the problem, I have tried replacing the main relay, fuel relay, all connectors are clean, all fuses are clean.
This only started happening after my valve adjustment. Could this be an ignition issue? Plugs are gapped. Could I have made the gap too small?
The car drives fine if I am in a higher RPM range, or if i am accelerating or decelerating.
Any suggestions?

Does it do it when you rev the engine to 2000 in neutral? Or is this only when you're moving?
