The water pump pulley was too small, resulting in over driving the water pump. After a hard pull, I noticed coolant temps dropping so much, the warm up enrichment was turning back on.
Something just went trough my mind. Based on the pictures (where the water pump pulley appeared to be plastic), I think you were using the 122mm E46 M52/M54 water pump pulley and the 172mm ATI pulley? In that case it makes a lot of sense, the bloody thing has been spinning up to 9000rpm..
Just an FYI. M50 engines used a bigger, 132mm pulley, and it's a direct replacement of the 122mm E46 pulley. Of course, that's still much, much faster than the 160/144 ratio.
I'm planning to run a 150mm crank main pulley with the 132mm M50 WP pulley, which is almost the same ratio as the stock one. (1.11 vs 1.14)
